C H A M P I O N S H I P   C H I L I
Now I’ve judged more chili cook-offs around this great nation than I care to remember…but because we’ve come to be so close I’m going to give you the secrets of how to make championship chili…a lot of ex-champions are gonna get riled, so keep it just between us.

Chili judges are purists, which means…No Beans! No Grease! Use Beef! And have a balance of spices and peppers…that’s it! Sounds simple, but you’ll spend a lifetime balancing it all. Luckily, those good ‘ol boys at Six Gun Chili’s done it for you. 

Do this:

Use semi-tough lean beef cuts (like 2 pounds of chuck), chop the meat into ¼” chunks and brown in a little fat, or oil. Drain all the fat. Add a 28oz can of diced whole tomatoes, juice and all, bring to boil adding beef stock as needed to keep a thick stew. Add the Six Gun Mixin’s (No Masa Flour!) with most of the cayenne and simmer uncovered until the meats tender (90 minutes, or so). Be sure and keep adding water, or stock, to keep a thick stew. Just before judging add 1 TBSP. of chili powder to give it a final kick.


Judging Championship Chili

Chili judging is usually a group activity and you can never be sure how it will turn out. I’ve judged World Championships with memorable bowls full of green chili that smoldered like lava, I’ve had to taste chili with maple syrup (the proud cook tapped his own maple trees) and even one that was supposedly made from ‘road-kill’(I believe it). 

A chili judges life span may be short but it is interesting. Here’s what judges want.

Color: Brick Red
Beef: Small pieces that are al dente tender
Heat: Not too hot to mask the flavors of the chili, ‘a cayenne after burn’ is wanted
Additions: Nothing. The gravy should be smooth with no odd particles of beans, vegetables, cheese, or onions.
